Chef Mark “Gooch” Noguchi joined Punahou in 2018 as a kindergarten – grade 12 food curriculum specialist in the Punahou Learning Commons. This year, Gooch is partnering exclusively with Academy chemistry teacher Francesca DePasquale in a Culinary Chemistry course that shows students how they become chemists any time they set foot in a kitchen, with some life skills sprinkled in along the way.
Gooch supports teachers throughout the school by connecting students with practical knowledge ranging from science to ethics through common ingredients that bond families and communities. As students practice cooking methods significant to global cultures, they also explore intersections with other subjects and skills, from learning how citric acid changes proteins while curing fresh fish in lemon and lime juice to cooking rice while understanding water absorption and variables. In culinary chemistry, students better understand the role ingredients play in reactions and physical changes that happen during cooking.
